Nachos are of those recipes you can’t mess up. All you need is tortilla chips of course, meat and cheese. Once you have the base covered then you can’t spice things up, like how I did in this BBQ Chicken Nachos recipe

I love nachos and it isn’t just for the taste of it. I love how simple it is to put together. Not only is it simple but there are various ingredients you can add to make it fun and different.


So another reason to love nachos is simply because you can eat it all year long. It’s not solely for winter or summer or whatever, it can be enjoyed during cold or hot weathers.

This is a recipe to be enjoyed with family or friends, it’s a great way to start a conversation especially in those awkward moments of silence.

Like I previously said, I wanted to spice up the traditional recipe by adding my personalised touch. So, I went for a bbq chicken version.

It was so simple to do, all I did was covered the chicken that I diced into bbq sauce and I coated them. That simple.

BBQ ChickenNachos

Ingredients

  • Tortilla chips
  • 1 lb Chicken breast diced into chunks
  • 12 Bacon slices diced
  • 1 Jalapeño diced
  • 1 Tomato diced into chunks
  • 1 Green bell pepper diced
  • 1 & 1/2 cups Cheddar cheese shredded
  • 1 cup Barbecue sauce
  • 1/2 cup Sour cream
  • 1 tbsp Olive oil
  • 1 tsp Paprika
  • 1/2 tsp Salt
  • 1/2 tsp Black pepper

Instructions

  • Preheat oven at 375°F/180°C.
    Repeat. Then bake for 15 minutes and then enjoy!
  • Add olive oil to a skillet and cook chicken, season with paprika, black pepper and salt. Once the chicken has done cooking remove and place into a bowl.
  • Cook the chopped bacon in the same skillet. Then set aside.
  • In the bowl, add the barbecue sauce to the chicken and mix everything together. Make sure each chicken is well coated with the sauce.
  • Line a baking tray with parchment paper then lay the tortilla chips onto it. Top the chips with the onion, bell pepper, chicken, bacon, jalapeños, tomato and cheese. Bake for 15-20 minutes and until the cheese has melted.
  • Once the nachos are done baking, drizzle the sour cream on top and enjoy!
