I am not a fan of the store bought frosting, so I always look to make my own. Today I wanted to spice up the traditional recipe and I got this coconut buttercream frosting recipe.
People tend to think that frosting is hard to make. I was one of those people. Every single time I would try to make frosting in the past, I would fail. But after understanding the science behind of it, I have succeeded.

I wondered what was the secret behind the perfect frosting and it is so simple. Your butter needs to be at room temperature. I know this may seem obvious but this is the key to a good frosting. You need the right amount of sugar also to have a fluffy and smooth frosting.
It may seem pretty obvious but trust me this tip will help you.
I used this coconut buttercream frosting recipe with my delicious, easy and flavourful Pina colada cupcakes. The recipe is kid friendly but if you want a kick you can always add some white rum in there.
Let’s get into the recipe.
Ingredients:
(makes 2 cups)
- 2 cups Unsalted butter (equivalent of 2 sticks of butter or 250g), at room temperature
- 1/4 cup Coconut milk, from the can
- 4 cups Confectioners sugar, sifted
- 1 tsp Vanilla or Coconut extract
Directions:
- Beat the butter using a hand or stand mixer. Beat until it is soft before adding the sugar gradually on a low speed.
- Once all the sugar has been added, pour in the coconut milk and the vanilla. Beat until everything is well incorporated.
