Sorrel Drink is a traditional West Indian Christmas drink that is made with the famous Sorrel.

What is Sorrel?

Sorrel is grown throughout the Caribbean and when it is steeped in hot water, it gives this vibrant red color. This year we decided to take this famous drink and make this Delicious Caribbean Sorrel Cake.

In other parts of the world, Sorrel is also called Hibiscus. This drink can also be traced back to Africa where some people may call this drink Bissap.

Delicious Sorrel Cake

This Sorrel Cake takes the traditional Sorrel Drink and turns into a delicious Caribbean Sorrel Cake. Perfect for a Caribbean Christmas.

Ingredients

  • 2 medium Eggs beaten
  • 1 & 1/2 cups All-purpose flour sifted
  • 1/2 cups Sorrel drink
  • 1/2 cups Granulated sugar (& 2tbsp)
  • 1/4 cup Vegetable oil
  • 1/4 cup Whole milk
  • 2 tsp Vinegar
  • 1 & 1/4 tsp Baking powder
  • 1 tsp Vanilla extract
  • 1/2 tsp Cinnamon
  • 1/2 tsp Baking soda
  • 1/4 tsp Nutmeg
  • 1/4 tsp Almond essence
  • 1/4 tsp Salt
  • 1/8 tsp Ground ginger
  • 1/8 tsp Ground cloves
  • 1/8 tsp Allspice
  • 2-3 drops Red food coloring

Instructions

  • Preheat your oven to 375°F/180°C.
  • Grease a 9-inch round cake pan and set aside.
  • In a cup, mix the whole milk, red food coloring and vinegar.
  • In a mixing bowl, mix together the flour, cinnamon, nutmeg, allspice, ground cloves, ground ginger, salt, baking powder and baking soda.
  • Add the eggs, vegetable oil and sugar to the flour mix.
  • Gradually stir in the sorrel drink and the milk.
  • Mix everything together.
  • Pour the batter into the cake pan and bake for 30-35 minutes.
  • Let the cake cool completely then add icing or decorate it to your liking.
