Cornmeal is the result of dried maize being grounded to either being coarse, medium coarse or fine. It also comes in two different colors, either white or yellow. To make cornmeal, we like to use the yellow fine cornmeal.
Making this dairy free cornmeal porridge recipe is fairly simple. It doesn’t require much ingredients nor much time. You do not have to crazy at the grocery store trying to find the ingredients because they are already at home.
Dairy Free Cornmeal Porrdige
Ingredients
- 1 & 1/2 cups Coconut Milk (or any milk of your choice)
- 1 & 1/2 cups Warm water
- 1 cup Fine yellow cornmeal
- 1/3 cup Brown sugar
- 1 Cinnamon stick
- 1 tsp Vanilla extract
- 1/2 tsp Almond essence
- 1/2 tsp Nutmeg
- Pinch of salt
Instructions
- In a medium pot, warm the milk and cinnamon stick.
- In a bowl, mix the cornmeal and warm water together until it is smooth.
- Add the cornmeal to the milk along with the spices, vanilla extract, almond essence and salt.
- Stir everything together and let it simmer for 7-10 minutes. Be sure to stir it occasionally.
