You cannot go wrong with cupcakes, they are easy to make and they are fun. These Vanilla Guava Cupcakes are tropical and moist. Perfection!

Growing up, I always dreamed about owning a bakery and baking cakes, cupcakes… all day. I always loved watching extreme cake baking shows on the food network. However, I slowly realized that it isn’t my strong point. So if I am not a pro baker then these moist Vanilla Guava Cupcakes are easy for anyone to make.

Baking cakes and cupcakes may seem intimidating to some people. But actually that isn’t completely true, at least not for these cupcakes. These cupcakes are easy to make, not because I want you to try the recipe but because it is the truth. Even the frosting is easy to make and it isn’t difficult at all.

Although the cupcake is the most important part of the recipe, I have to brag a little about the frosting. I made an amazing guava buttercream frosting that I was shocked by.

Guavaberry is a tropical fruit that is found throughout the Caribbean, Latin America and in Asia. There are different varieties of the fruit and I grew up on the pink ones. We use them for rum, tarts and now cupcakes. Unfortunately, I didn’t use the fruit itself but I used the paste. The paste can be found in the international aisle in the supermarket or thanks to Amazon you can order it.

I must admit that I am no cake decorating expert, so my frosting isn’t on point at all. So this another proof that this recipe is for all home cooks out that are just like me. We love baking but it doesn’t love us.

Not only is the frosting good but the cupcakes themselves are moist and literally melt in your mouth. I love it and whenever I am making vanilla cupcakes, I always run to this recipe.

Before diving into the recipe, I thought I should share some TIPS & TRICKS with you guys first:

TIPS & TRICKS
  • Getting perfect cupcakes: Cupcakes are easy but they are also easy to mess up. I cannot claim to always get the perfect cupcakes every single time but I do try my best every single time. Of course just like any cake, you cannot over mix your batter. In order to get that fluffy, cloudy texture, I suggest creaming the sugar, eggs and vegetable oil together before sifting in the wet ingredients. Lastly, you need to be careful not over full the liners because you will end up with mushroom tops.
  • The guava paste: When it comes to the paste, I would recommend using unsweetened guava paste. However, if you can only get your hands on the sweetened paste then you can use it, just monitor the sugar. Now if it is impossible for you to get your hands on guava paste then you can use guava jam. If you don’t get a nice pink color then you can add few drops of pink or red food coloring.

Moist Vanilla Guava Cupcakes

Ingredients

Vanilla cupcakes:

  • 2 medium Eggs at room temperature
  • 1 cup All-purpose flour sifted
  • 1 cup Granulated sugar
  • 1 tsp Baking powder
  • 1/2 cup Milk at room temperature
  • 1 tsp Vanilla extract
  • 1/2 tsp Baking soda
  • 1/4 cup Vegetable oil
  • 1/4 tsp Salt

Guava buttercream frosting:

  • 4 oz Guava paste or alternative cut into chunks
  • 1 & 1/2 cups Powdered sugar sifted
  • 1 cup Unsalted butter softened
  • 1 tsp Whole milk at room temperature
  • 1/2 tsp Vanilla extract

Instructions

Prepping:

  • Preheat oven to 350°F/180°C.
  • Line a cupcake pan with liners and set aside.

Making the cupcakes:

  • In a mixing bowl, cream together the eggs, vanilla extract, sugar and vegetable.
  • Mix until pale, light and fluffy.
  • Sift in the flour, baking powder, baking soda and salt. Alternate with the milk.
  • Once everything is in the bowl, stir the mixture until it is mixed perfectly.

Baking the cupcakes:

  • Pour about 1/4 cup into the liners. Bake for 15-30 minutes.
  • Once it's baked, let it cool for at least 10 minutes.

Making the frosting:

  • In a small/medium sauce pan, add the water and the guava paste. Place over medium-high heat.
  • Break up the chunks so they can melt easily. Be sure to constantly stir the mixture and let it break apart.
  • Once the guava chunks are melted and the paste now resembles a thick jam consistency. Set side when it is done.
  • Using a mixer or stand mixer, beat the butter until it is fluffy. Slowly add in the vanilla extract, powdered sugar and the milk.
  • Beat the mixture for at least 5-7 minutes.
  • Frost the cooled cupcakes and enjoy!
