In order to make this recipe taste good, we highly recommend using our homemade browning sauce. This browning sauce will give these oxtails a great taste and a rich dark color. Making the browning sauce is totally worth it and it doesn’t take a lot of time.
These oxtails are really simple. They are seasoned with simple seasonings and then they are cooked for a long time in a delicious sauce. If you own a pressure cooker, crock pot or instant pot then you can use it to cut down the cooking time.

Caribbean Brown Stewed Oxtails
Ingredients
Seasoning:
- 1 lb Oxtails cleaned and fat removed
- 1/4 cup Browning sauce
- 1 tsp Paprika
- 1 tsp Garlic powder
- 1 tsp Onion powder
- 1/2 tsp Salt
- 1/4 tsp Black pepper
For the sauce:
- 2 & 1/2 cups Water
- 2 tbsp Tomato paste
- 2 tbsp Oil
- 1 tsp Salt
- 2-3 medium Pimento peppers chopped
- 2 medium Garlic cloves minced
- 1 medium Bell pepper chopped
- 1 medium Onion chopped
- 1 medium Scotch bonnet pepper (optional)
- 3-4 sprigs Fresh thyme
- 3-4 sprigs Fresh parsley
- 1 sprig Scallion chopped
Instructions
- In a large bowl, season the oxtails with the paprika, garlic powder, salt, black pepper, onion powder and browning sauce. Mix everything together.
- In a large pot, warm the oil then cook the oxtails on each side for 5-7 minutes. Remove when it’s done.
- Add the pimento peppers, onion, garlic, scallions and bell pepper. Cook for 2-3 minutes.
- Place the oxtails back into the pot along with the water, tomato paste, thyme, salt, parsley, scotch bonnet ( if using) and the marinade (if you have any leftovers). Mix everything.
- Cover and let it cook for 1-1/2 hours.
