If you love mushrooms then this one-pot mushroom rice recipe will be the perfect dish for you.
I enjoy a good one pot recipe, it’s easy, quick and helps out in the dishes department. Doing dishes is my least favourite chore and recipes like this one I enjoying making since I don’t need a whole set of tools to make it. Not only will it save you time in the cleaning up process but it will also save you money since this one-pot mushroom rice recipe only requires very little ingredients.
To make this recipe, I used some different ingredients than the classic recipe but they can all be found in your pantry or at grocery store, I guarantee you that they are inexpensive.
I used white mushrooms or button mushrooms whatever you may call them, which is the easiest type of mushrooms you can find and the easiest ones to cook. I added some Worcestershire sauce for flavour and colour, I felt like this needed a little kick and I got this from the Worcestershire sauce. And I used some fresh parsley along with vegetable broth to this dish.
I wanted a lot of flavour in this mushroom rice recipe so I swapped water for broth when it was time to cook the rice. But you can also use water or half water half broth. But try using broth only, it really does wonders especially vegetable broth.
For this recipe I used my favourite type of rice, which is basmati rice. I just love the scent it has when it is cooking and the taste. But you can use whatever rice you enjoy eating whether it may be brown or white.
This recipe was a crowd pleaser, I ended up making this recipe back to back because everyone loved it. And I ate this alone because I found it so filling and it kind of didn’t need a side dish but you can add one.
This makes the traditional rice look real boring. This mushroom rice recipe is perfect for those days when you want to enjoy a nice rice dish but you want to spice it up a little.

One-Pot Mushroom Rice
Ingredients
- 10-12 White mushrooms sliced
- 2 cups Uncooked long grain rice
- 1+1/2 cups Vegetable broth
- 2 tbsps Vegetable oil
- 1 tbsp Worcestershire sauce
- 2 tsps Freshly chopped parsley
- Salt to taste
Instructions
- Heat the vegetable oil in a pot over medium-high heat then place the sliced mushrooms into the pot. Cook them until they are golden brown, which takes about 5-7 minutes.
- When the mushrooms are cooked, add the rice followed by the broth, fresh parsley and salt. Stir them all together then reduce the heat to low and cover. Let it cook for 15-20 minutes. Or until there isn't any liquid left and the rice is soft when you squeeze it.
- Be sure to check the rice regularly because you may need more liquid and/or less time. Stir constantly also.
- Once the rice has done cooking, remove from the heat. Serve and enjoy!
