Donuts are delicious and perfect but they are deep fried. However, these cinnamon banana bread donuts are baked and they are still delicious.
I really enjoy donuts, I think they are mini cakes on the go. I switched up the traditional donut recipe, which usually calls for deep frying and I baked them instead. Without a doubt, the regular donuts are delicious, but I had to share these amazing Baked Cinnamon Banana Bread Donuts.
Banana bread is one of my favorite things on earth. It’s one of those recipes that you can’t really categorize. You’re not sure if it’s actually a bread or a dessert. Either way I love it, I love it so much that I had to turn it into donuts.
Unlike regular donuts, these are baked like I said many times before. I noticed that baked donuts differ from fried donuts in texture.
Fried donuts tend to be fluffier and contain more air, if that makes any sense. Whereas these baked donuts are more like a cake than donuts and I love that. So if you want to have mini round cakes, then this is the recipe for you.
At this point, you are probably wondering where does the cinnamon part come in. Well, I coated these bad boys in cinnamon sugar.
Cinnamon sugar is actually very simple to make, all you need is sugar and cinnamon. In order to make the sugar stick to the donuts I had to dunk them in melted butter then into the sugar. It’s very simple but rewarding.
Unlike other baked donut recipes on the web, I didn’t include yeast in mines.
I opted out of using yeast in this recipe because I didn’t want the donuts to have a bread like texture. Aiming for a cake like donut may not please everyone but I think you should give it a try first.

Baked Cinnamon Banana Bread Donuts
Ingredients
For the donuts:
- 1 medium Ripe banana
- 1 medium Egg at room temperature
- 1 & 1/4 cups All-purpose flour sifted
- 1/4 cup Granulated sugar
- 2 tbsp Whole milk at room temperature
- 2 tbsp Butter
- 1 tsp Baking powder
- 1/2 tsp Vanilla extract
- 1/4 tsp Fresh or ground cinnamon
- 1/4 tsp Baking soda
- 1/4 tsp Fresh or ground nutmeg
- 1/4 tsp Almond essence
- 1/8 tsp Salt
- 1/8 tsp Ground allspice
For the cinnamon sugar:
- 2 tbsp Butter melted
- 2 tbsp Granulated sugar
- 1/4 tsp Cinnamon powder
Instructions
Prep:
- Preheat the oven to 180°C/350°F. Grease a donut pan and set aside.
Making the donuts:
- Mash the bananas then whisk in the egg, granulated sugar, vanilla extract, butter and almond essence. Whisk until the mixture is light and fluffy.
- In a separate bowl, mix the together the flour, salt, cinnamon, nutmeg, allspice , baking powder and baking soda.
- Gradually mix in the dry ingredients into the wet ingredients, along with the milk.
- Once the batter is mixed well, pour the batter into a piping bag and pour into the donut pan.
- If you don't have any piping bags, you can spoon the batter into the pan.
Baking the donuts:
- Bake the donuts for 10-12 minutes or until a toothpick inserted in comes out clean.
- When they are done baking, remove from the oven and let it cool for 5-7 minutes before removing from the pan. Transfer to a wire rack to cool.
Making the cinnamon sugar:
- Mix the sugar and the cinnamon powder together.
Coating the donuts:
- Dunk the top of the donuts into the melted butter then into cinnamon sugar. Repeat with the other donuts and enjoy!
