A good muffin makes me happy. This banana white chocolate muffins recipe is a good muffin.
Some mornings I go for a light breakfast. I may pick up a yogurt or go for a muffin. When I craved muffins this morning, I made this banana white chocolate muffins recipe. Bananas are my favourite morning fruits, so it’s natural for me to incorporate them into a muffin recipe.
I usually don’t like white chocolate, since I find it too sweet, but it wasn’t sweet at all in these muffins. You might think bananas and white chocolate combined might make this muffin recipe sweet, but they didn’t. I controlled the portion of the sugar that I added and it was perfect.
I actually wanted to make a raspberry muffin recipe with the white chocolate but my frozen raspberries stuck together. It was mission impossible to get that situation fixed, so instead this banana white chocolate muffins recipe was born.
This literally turned out way better than the raspberries, I wasn’t initially thinking about using bananas but I glad I did. I have zero regrets and you won’t either when you taste these muffins.

Ingredients:
makes 10-12 muffins
- 2 cups Flour, sifted
- 2-3 Ripe bananas
- 1/2 cup Melted unsalted butter
- 1 Egg
- 1/2 tsp Baking soda
- 1 tsp Baking powder
- 1/4 cup Granulated sugar
- 1 tsp Vanilla extract
- 1/4 cup Whole milk
- 3/4 cup White chocolate chips
Directions:
- Preheat oven to 375°F/180°C. Line muffin pans with liners and set aside.
- In a mixing bowl, mash the bananas before adding the egg, sugar and butter. Mix until fully incorporated.
- Sift in the flour, baking powder and baking soda into the egg mixture. Pour in the milk and vanilla extract and whisk the ingredients until everything is combined.
- Finally fold in the white chocolate chips into the batter.
- Scoop the batter into the pan. Be careful not to add too much batter. Bake for 20-25 minutes or until a toothpick inserted in comes out clean and the top is golden brown.
- Let it cool for 10 minutes in the pan before removing them. Then an additional 10 minutes out of the pan before enjoying!
