Every morning I start my day off with a banana for many years now, it has become a morning ritual of mine. I have to admit that I don’t like bananas that are too yellow or that have brown spots on them.
When they start to become fully ripe or brown spots start to appear, I use them to make pancakes or this banana bread recipe.
Banana bread is one of those delicious baked goods that retain its moistness days after being baked. This one of the various reasons why I love this recipe.
The thing that makes a Caribbean Banana Bread recipe different from any other recipes out there is the almond extract. That is the only ingredient that I added in as an extra ingredient and it truly makes a huge difference.
Before we go into the recipe, I just wanted to share some few tips:
- In order to have a nice sweet and moist banana bread you need bananas that are very ripe. If you use the ones that are yellow with a slight touch of green then you won’t get the right results, in terms of taste.

Caribbean Banana Bread
Ingredients
- 2 cups All-purpose flour sifted
- 1/2 cup Granulated sugar
- 1/4 cup Vegetable oil
- 2-3 Ripe bananas
- 2 Eggs at room temperature
- 1 tsp Baking powder
- 1 tsp Vanilla extract
- 1/2 tsp Baking soda
- 1/2 tsp Fresh or ground cinnamon
- 1/4 tsp Salt
- 1/4 tsp Almond extract
- 1/4 tsp Fresh or ground nutmeg
- 1/8 tsp Fresh or ground ginger
Instructions
- Preheat oven at 350°F/175°C. Grease a 9x5in. loaf pan and set aside.
- In a mixing bowl, whisk together the vegetable oil, granulated sugar, vanilla extract, almond extract and eggs using a whisk or a hand/stand mixer. Mix everything together until fully combined.
- In a separate mixing bowl, mash the bananas then add the wet ingredients.
- Sift in the flour, salt, baking soda, nutmeg and cinnamon using a sifter. Mix everything together.
- Once everything has been mixed together perfectly pour the batter into the loaf pan and bake for 45-50 minutes or until the top is golden brown and a toothpick inserted in comes out clean.
