In the Caribbean, we love our stewed chicken, beef, goat, oxtails and turkey wings. The meat literally absorbs the amazing sauce and after about an hour or less, the meat is done and falls off the bone. This Caribbean Brown Stewed Turkey Wings recipe is too good to keep to myself. So I know I had to share this amazing recipe with you guys.

Unlike stewed chicken, stewed turkey wings aren’t as popular on the islands. Even though we do eat it, it isn’t something that you tend to see on the dinner table every week. Nevertheless, it is something we enjoy once it is cook right.
Turkey wings are notorious for being difficult to cook. They are tough and tend to take very long to cook. On the other hand chicken takes less time to cook so it is more common to have stewed chicken. But I decided to make this recipe anyways because I just love it.
In order to get that rich brown color, I like to start off with a homemade browning. It is very simple and it guarantees a nice golden brown color and a rich flavor.
Once you have the browning down, the rest will go smooth and easy. This isn’t a complicated recipe at all. The only intimidating thing about this recipe is the cooking time. Like I said earlier on, turkey wings need to be cooked for a long period of time. If you undercook the turkey, you will end up with a hard wing instead of a tender and juicy one.
Besides the cooking being the key part in this recipe, the marinade is just as important. Although the marinade is simple, it is an important part to have some bomb turkey wings.
I don’t add a whole lot to marinade the wings because they will absorb most of their flavor from the sauce. I keep it simple but I highly suggest letting the meat sit for at least overnight but if you want to go quicker then 4-8 hours.
Before we get into the recipe, I thought I should share some TIPS & TRICKS with you guys first:
TIPS & TRICKS
- Seasoning the meat: Simple. That is the way I keep it when it comes to seasoning my meats. I used paprika, black pepper, salt, garlic powder and maggi. Now Maggi sauce is the OG in my family, we season our meat with it and I just cannot do without it. It is a dark seasoning sauce that gives a lot of flavor to your meat. I know it isn’t available everywhere and a very good replacement for it is soy sauce(which is the most common replacement) or Worcestershire sauce.
- The browning: This is the most important part to this recipe. If you want that nice color then you cannot skip this step. It is easy to do, all you need is the right amount of sugar and vegetable oil and let the sugar caramelize. Once you have the caramel, cook the wings on each side for 5 minutes each. You will have to work in batches.
- Cooking the turkey wings: In order to get the meat brown, you have to brown the meat before making the sauce. After the browning process, you proceed by adding the rest ingredients. In order to have a juicy, tender wing that falls off the bone, the wings have to be cooked for at least 2 hours. I cooked mines for 1 & 1/2 hours and they fell right off.

Caribbean Brown Stewed Turkey Wings
Ingredients
The seasoning:
- 6 Turkey wings
- 2 tbsp Maggi seasoning sauce or alternative
- 4 tsp Paprika
- 2 tsp Garlic powder
- 2 tsp Salt
- 1/2 tsp Black pepper
The browning:
- 2 tbsp Brown sugar
- 1/4 cup Vegetable oil
The base:
- 3 & 1/2 cups Water
- 2 tbsp Tomato paste
- 1 tsp Salt
- 1/2 tsp Black pepper
- 4-6 springs Fresh parsley chopped and remove the branch
- 4 springs Fresh thyme
- 2 medium Garlic cloves minced
- 1 medium Onion diced
- 1 medium Bell pepper diced
- 2 Pimento peppers diced
Instructions
Seasoning the wings:
- In a bowl, mix together the wings, maggi sauce, salt, black pepper, garlic powder and paprika.
- Cover and let it marinade overnight or at least 4 hours.
Making the browning:
- Warm a large pot over medium-high heat, add the oil.
- Once the oil is warm, spread the sugar evenly into the oil and let it caramelize for about 1-2 minutes without stirring.
- Place the wings in the caramel and cook for 5 minutes on each side. You may need to work in batches.
- Remove the wing from the pot and set aside.
Making the base:
- Cook the bell pepper, pimento pepper, garlic and onion for 2-3 minutes.
- After the 3 minute mark, add the wings, water, tomato paste, salt, black pepper, thyme and parsley.
- Stir everything and lower the heat to low and let it cook for 1 to 1 & 1/2 hours.
Notes
- Maggi seasoning sauce alternatives: soy sauce or Worcestershire sauce.
- Serve with rice and peas, plantains and cole slaw
