West Indians love a good boiled dumpling, but they also love their fried dumplings. We are in love with this Caribbean fried coconut dumpling recipe and we think you will be too.

Without a doubt, Caribbean dumplings are one of the many great things to have been created in the islands. Dumplings are basically flour, sugar, salt, sometimes butter and cornmeal that are mixed together. The dumplings are shaped into an oval shape or flat round shape then boiled or fried.

Of course they are many other ways you can make dumplings, you make cassava dumplings or cornmeal dumplings. Whether you choose to boil or fry them, they will taste amazing.

Caribbean Fried Coconut Dumpling

This Caribbean fried coconut dumpling is definitely a must try. It is made with freshly grated coconut which makes it taste amazing.

Prep Time 5 minutes
Cook Time 10 minutes

Ingredients

  • 1 & 1/3 cups All-purpose flour sifted
  • 1 cup Freshly grated coconut
  • 1-2 cups Oil for frying
  • 1/4 cup Warm water
  • 2 tbsp Granulated sugar
  • 1 tbsp Butter at room temperature
  • 2 tsp Baking powder
  • 1 tsp Salt

Instructions

  • In a mixing bowl, mix the flour, salt, baking powder, grated coconut and sugar together.
  • Add the butter and mix it into the flour.
  • Gradually mix in the water.
  • Knead the dough and make sure it isn't too sticky. It should be slightly sticky.
  • Place the dough on a floured surface, knead for 1 minute more.
  • Divide the dough into 20 equal balls that are about 1/2 inch round ball.
  • Set on a tray, cover with a towel and let it rest for 20-30 minutes.
  • Heat a pan or pot with oil, once it is hot add the dough.
  • Fry on each side for 2-3 minutes then flip and cook for 2-3 more minutes.
