This recipe is definitely for all the cheesecake lovers out there. Not only is this Caribbean passion fruit cheesecake delicious but it is creamy and as the right amount of sweet.

Passion fruit is one of the fruits that we love to use, we made juices, whipped cream and cocktails with it. So it was only natural for us to make dessert with it, so we made a cheesecake with it. Along with cheesecake being very tasty, adding fresh passion fruit to it made it even tastier.

Cheesecake isn’t one of those dessert recipes that can be ready in 30 seconds but it is totally worth the time. So we think this Caribbean passion fruit cheesecake is worth the time.

Caribbean Passion Fruit Cheesecake

This Caribbean passion fruit cheesecake is perfect for any cheesecake lover. It is sweet and tarty because of the use of fresh passion fruit.

Ingredients

Passion fruit extract:

  • 6 medium Passion fruit halved
  • 1/4 cup Water

Crust

  • 12 Graham crackers crushed
  • 4 tbsp Butter melted
  • 2 tbsp Granulated sugar

Cream cheese base:

  • 16 oz Cream cheese softened
  • 1/2 cup Sour cream at room temperature
  • 1 tbsp Flour
  • 1/2 cup Granulated sugar
  • 1 tsp Vanilla extract
  • 1/4 tsp Salt
  • 3 medium Eggs at room temperature

Instructions

  • Cut the passion fruit and remove the pulp. ⁠⁠
  • Mix together the pulp and the water, let it sit for 5 mins. ⁠Then drain. ⁠⁠
  • Preheat your oven to 180°C/375°F.⁠⁠
  • Mix together the crushed graham crackers, melted butter and sugar. ⁠⁠
  • Pat down the crust into the pan and unto the sides.⁠ Bake for 10-15 minutes. Then cool. ⁠⁠
  • Using a hand or stand mixer, beat the cream cheese until it is smooth. Gradually mix in the eggs followed by the sugar, vanilla extract, flour, sour cream, passion fruit juice and salt. Mix everything together.⁠⁠
  • Pour the batter into the cooled crust and bake for 1 hr to 1 h 30 minutes at 160°C/350°F.
  • Let the cheesecake cool before placing it in the fridge to chill.
