With rice being playing a huge role in Caribbean cooking, we have to share more rice recipes. We like rice but it can get pretty boring and repetitive, so we always look to spice it up a little. One way we thought we should spice things up is by adding coconut milk. the result of that is this Caribbean style coconut rice.

Rice is the go to starch in the Caribbean. We love to use rice in most of our recipes, we even turned it into a dessert. However, rice can be very repetitive if it is cooked the same way all of the time. So to prevent you from being bored with rice we came up with this recipe.

Adding coconut milk to rice is revolutionary. Not only did we add coconut milk to the rice, we also added pimento peppers. And the result is this delicious Caribbean style coconut rice.

Caribbean Style Coconut Rice

This Caribbean style coconut rice is made with coconut milk, coconut oil and pimento peppers. It is perfect for a quick dinner or lunch.

Cook Time 20 minutes

Ingredients

  • 3 medium Pimento peppers finely chopped
  • 2 medium Garlic cloves minced
  • 2 cups White rice
  • 1 & 1/4 cups Coconut milk
  • 1/2 cup Water
  • 2 tbsp Coconut oil
  • 1/2 tsp Salt

Instructions

  • Rinse the rice with water at least 2-3 times. ⁠⁠
  • Place a medium pot over medium heat and warm the coconut oil.⁠⁠
  • Stir in the pimento pepper, garlic and rice. Toast for 1-2 minutes.⁠⁠
  • Stir in the coconut milk, water and salt.⁠⁠
  • Cover and cook for 15-20 minutes.⁠
