This Cheesy Caribbean Plantain Lasagna recipe really competes with traditional lasagna.

Clearly we love plantain, we love it so much that we had to use it to make a lasagna. Although this recipe isn’t our creation, we still added our own twist to things. This recipe idea comes from the traditional pastelon recipe.

Unlike traditional lasagna, this recipe uses plantain as its pasta base. We love using ripe plantain that we boil and then smashed to top the meat base. The meat is cooked and seasoned in a fairly simple way to keep things simple and quick.

In order to make it cheesy and delicious, we topped the lasagna with cheddar cheese and heavy cream that has been lightly seasoned. The lasagna comes together perfectly and we are in love.

Cheesy Caribbean Plantain Lasagna

This cheesy Caribbean plantain lasagna is cheesy, meaty, delicious and easy to make. This is the perfect substitute to the traditional recipe.

Ingredients

For the beef:

  • 1 lb Ground beef
  • 2 medium Pimento peppers chopped
  • 2 medium Garlic cloves minced
  • 1 medium Bell pepper chopped
  • 1 medium Onion chopped
  • 3-4 sprigs Fresh parsley
  • 3-4 sprigs Fresh thyme
  • 2 sprigs Scallion chopped
  • 1/4 cup Water
  • 4 tbsp Tomato paste
  • 1 tbsp Olive oil
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1/2 tsp Paprika

For the plantain:

  • 5-6 medium Ripe plantains
  • 1 tsp Salt
  • 1/2 tsp Black pepper

For the heavy cream:

  • 1/2 cup Heavy cream at room temperature
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 1/4 tsp Dried thyme
  • 1/4 tsp Dried parsley

Instructions

  • In a skillet/pan, heat the oil then brown the ground beef. Making sure to break it up.
  • Add the veggies along with the water, tomato paste, salt, black pepper, paprika, parsley and thyme. Cook everything for 10-15 minutes.
  • When it is done cooking, set aside and let it cool.
  • Cut the plantain into chunks and add to a pot with water. Boil for 15-20 minutes.
  • Remove the skin then mash the plantains. Season with salt and black pepper.
  • In a bowl, mix the heavy cream, salt, black pepper, dried thyme and dried parsley together.
  • Preheat oven to 180°C/375°F.
  • In a 9 inch baking dish, start by adding some of the meat to the pan followed by some of the plantain then the meat, top it off with the heavy cream and cheddar cheese. Top with another layer of the plantain, meat, heavy cream and cheddar cheese.
  • Bake for 20-30 minutes then let it cool before enjoying.
