Cobbler is a summer recipe and usually it’s made with peaches or sometimes berries. But in this recipe I will introduce you to this coconut mango cobbler.

I’m a true Caribbean girl, I love the beach, the sun, the music and the food. We are blessed with all sorts of fruits and veggies that you have a hard time finding in Europe (story of my life right now) or in the US. However, mangoes are easy to find, so I tend to buy them a lot and use them in different ways. One the many ways I use them is in this Coconut Mango Cobbler recipe.
Cobbler is a traditional Southern American food, which is usually served during the summer. It’s usually made with peaches but you can also find some recipes with berries. Mostly, blueberries.
Growing up I would sit and watch the food channel for several hours a day. Most of the shows were American based cooking, which made me fall in love with American cuisine. So when I started cooking I would always look to make American dishes, but things have changed. Nowadays, I try to recreate more Caribbean dishes and fusing Caribbean flavors into American dishes. Just like I did in this cobbler.
I have to admit that I was a bit hesitant to make this recipe, only because I had never made a cobbler before. There isn’t any Southern Grandma I can call for her recipe, I would really like that tho. The internet was my Southern Grandma and after doing some research and some testing, I think it came out pretty good.
In my opinion, the best part of this cobbler is the dough. I love how there is bits of shredded coconut in every bite and I love the texture. Like I said previously, this isn’t the authentic cobbler recipe but a variation of it. So my goal wasn’t to get the exact dough but something very close to it, and I believe I achieved that.
Before I dive into the recipe, I would like to share some tips and tricks with you guys first.
TIPS & TRICKS
- Mango: This fruit has so many different types and some aren’t sold in every single country. So it’s okay if you don’t get your hands on the same Mangoes as me, you can use any ripe mango for this recipe. The key is to use them while they are ripe. If you can only get your hands on the can version, that is okay. If you are using the fresh ones, I recommend cutting the mango down each sides and then cutting off the pulp from the seed. Slice the mango into chunks then remove the skin.
- Coconut: You can use freshly grated coconut, which is better but I didn’t use fresh coconut for this recipe. This was out of convenience and I wanted to save time. Instead, I used pre-shredded coconut that I got from the grocery store.
- Coconut milk: This is the second important ingredient in this recipe. This cannot be a Coconut Mango Cobbler recipe without this ingredient. I highly recommend it, but if you don’t like coconut milk or can’t get your hands on it, then instead of a 1/3 cup use a 1/4 cup of whole milk.

Coconut Mango Cobbler
Ingredients
Mango mixture:
- 4 ripe Mangoes sliced into chunks
- ¼ cup Granulated sugar
- 2 tbsp Cornstarch
Dough:
- 1 cup All-purpose flour sifted
- ⅓ cup Coconut milk
- ¼ cup Shredded coconut
- ¼ cup Granulated sugar
- 4 tbsp Unsalted butter cold
- 1 tsp Vanilla extract
- 1 Egg
Instructions
Prep:
- Preheat your oven to 350°F/150°C.
The mango mixture:
- In a mixing bowl, mix together the mango chunks, sugar and cornstarch. Mix them well together and set aside.
The dough:
- In a separate bowl, mix together the flour, salt, sugar and shredded coconut.
- Using your hands, crumb together the flour mixture and the butter. Crumb together until the dough resembles wet sand.
- Once the butter is well mixed into the flour, stir in the egg and vanilla extract.
- When the egg and vanilla extract is well blended in, gradually pour in the coconut milk.
Assembly:
- Pour the mango mixture into a 9×13 baking dish then top with the dough. You may need to use a spoon to spoon the dough.
- Spread the dough over the mango mixture using a butter knife.
Baking:
- Bake for 30 to 40 minutes.
- Enjoy it warm with some ice cream, preferably coconut sorbet.
