Tiramisu is a layered Italian dessert that is made with ladyfingers biscuits, whipped mascarpone and cocoa powder dusted on top. This Coconut Mango Tiramisu Parfaits is an island twist to this classic dessert.
Since this isn’t a traditional Caribbean dessert, we wanted incorporate flavors that will bring you back to the islands. One of those flavors we thought about was coconut. When you come to the Caribbean, coconut trees are everywhere so it was obvious to use it. Another common flavor is mango. We grow different types of mangos in the Caribbean so we had to include it into this recipe.
In addition to the tropical flavors making this dessert non-traditional, the idea of placing it in a jar is also non-traditional. Which makes turns this recipe into a coconut mango tiramisu parfaits.
Coconut Mango Tiramisu Parfaits
Ingredients
- 8 oz Mascarpone softened
- 1 cup Heavy whipping cream cold
- 1/4 cup Sugar
- 1 tsp Vanilla extract
- 1 Ripe Mango cut into chunks
- 6-8 Crushed graham crackers
- Shredded Coconut
- Toasted coconut flakes
Instructions
- Whisk the softened mascarpone, sugar and vanilla extract until it is smooth.
- In a separate bowl using a hand or stand mixer, beat the cold heavy whipping cream until soft peaks start to form.
- Fold in the whipped cream into the mascarpone and set aside.
- Assembly: use a jar or bowl, then start with the crushed crackers, tiramisu base, mango chunks and finally the coconut flakes. Repeat then top with the shredded coconut.
