West Indians love a good sweet treat. We love to make cakes, tarts, juices, ice creams and sugar cake. Sugar cake is a huge part of Caribbean culture. Because we love our culture, we had to post this colorful Caribbean style sugar cake recipe.
Grated coconut is the base for any sugar cake. All you have to do is to add water, grated coconut and sugar and let it simmer. Once the sugar has dissolved and the water has been reduced, the grated coconut is then spooned into drops to form cakes.
The name comes from the fact that there is a lot of sugar in the recipe. In order for the cakes to become solid, sugar is used because once you cook sugar it turns into a liquid that crystalizes when it cools down. Despite our Caribbean style sugar cake being colorful, some people prefer their cakes to be brown . The brown color is the result of spices and brown sugar.
Colorful Caribbean Style Sugar Cakes
Ingredients
- 1 Cinnamon stick
- 1 cup Granulated sugar
- 1 cup Finely grated coconut
- 1/4 cup Water
- 1/4 tsp Almond essence
- Coloring optional
Instructions
- Place a skillet/pan over medium heat.
- Stir in the water, sugar, almond essence and cinnamon stick.
- Boil for 1-2 minutes.
- Once the sugar has dissolved, stir in the coconut and let it simmer until the water has reduced.
- Remove from the heat and add the coloring (if you are using).
- Place 3-4 tbsp of the hot mixture unto a tray lined with parchment paper. Let it harden.
