I am a big oatmeal fan, I enjoy eating it for breakfast and think it is one of the healthiest things to have for breakfast. Although it is my fave, I wasn’t hesitant about making oatmeal pancakes but then I was surprised about the results. This Cream Cheese Oatmeal Pancakes recipe will definitely be full of surprise you will love.
Unlike the classic buttermilk pancakes, these pancakes aren’t made with regular flour. These are made with oat flour which is simple to make at home.
I wanted to make this recipe a low carb pancake recipe because sometimes carbs are your worse enemy. Running a food blog means that I have to test recipes before hand and sometimes that means carbs. Clearly this blog isn’t a healthy food blog, but occasionally I like to share some healthy-ish recipes.
Before, I would never thought I would ever be a fan of oatmeal pancakes. The idea of oatmeal pancakes sounded like something my grandmother would enjoy eating. Thankfully, once I made them and gave them a try, I realized they weren’t that bad.
One of the best part of this recipe is the cream cheese. Adding cream cheese to the recipe made it moist, tasty and extra special.
How to make oat flour?
It’s simple. All you need is some oats and a blender. I don’t have a fancy blender so once your blender works then you can use it.
I used instant oats because that is all I had at home but I highly recommend rolled oats. Just add 2 cups of the oats to the blender and blend until it is fine and resembles sand. And voila, you have oat flour. Once stored correctly, the flour can last anywhere between 1-2 months.

Cream Cheese Oatmeal Pancakes
Ingredients
- 8 oz Cream cheese
- 2 medium Eggs
- 2 cups Rolled or Instant oats
- 1/4 cup Oat milk or Whole milk
- 1 tbsp Granulated sugar
- 1 tsp Baking powder
- 1 tsp Vanilla extract
- 1/8 tsp Salt
Instructions
Making the oat flour:
- In a blender, add the oats and pulse until the oats are fine like flour.
- Set aside.
Making the pancakes:
- In a medium mixing bowl, add the cream cheese, eggs and the vanilla extract.
- Whisk the ingredients together until the mixture is smooth.
- Pour the oat flour into the cream cheese mixture. Mix until everything is well incorporated.
Cooking the pancakes:
- In a skillet over medium heat, wipe the pan with butter.
- Scoop at least 1/4 cup of batter into the pan.
- Cook the pancakes on each side for 5-7 minutes.
- Pour some maple syrup onto them. Serve and enjoy!
