Salmon is known for being healthy. It is packed with omega-3, protein and more. Along with being full of benefits, it is very tasty and very easy to cook. Although it is easy to cook, we tend to make it the same way every time. So we wanted to switch things up a little.
In order to make things a bit different, we though adding coconut milk to the recipe would be good. We also thought that mango would bring a different kind of taste. The result was this creamy coconut mango salmon recipe was born.
Creamy Coconut Mango Salmon
This creamy coconut mango salmon recipe is a great way to cook your salmon for dinner. The sauce is made with coconut milk and mango.
Ingredients
For the fish:
- 4 Salmon
- 1 tsp Salt
- 1 tsp Paprika
- 1/2 tsp Garlic powder
- 1/2 tsp Black pepper
For the sauce:
- 3-4 sprigs Fresh parsley
- 2-3 sprigs Fresh thyme
- 2 medium Garlic minced
- 2 medium Pimento peppers
- 1/2 cup Coconut milk
- 4 tbsp Olive oil
- 1/2 tsp Salt
- 1/8 tsp Black pepper
For the mango purée:
- 3-4 Mango slices (from the can)
- 4 tbsp Coconut milk
Instructions
- In a blender, add the mango slices and coconut milk. Blend until smooth.
- Season the salmon with salt, paprika, black pepper and garlic powder. Set aside.
- Place a skillet/frying pan over medium-high heat, warm the olive oil.
- Place the salmon skin down in the pan and cook for 5-7 minutes before flipping and cooking again for 5-7 minutes.
- Once the salmon is cooked, remove from the heat.
- Add the garlic and pimento peppers, let that cook for 2-3 minutes.
- Stir in the mango purée, coconut milk, salt, black pepper, thyme and parsley.
- Let the sauce simmer for 2-3 minutes.
- Add the salmon then cover it with the sauce and let it simmer for 2-3 minutes more.
