Like we said in other posts, porridge is a huge part of Caribbean culture. It is a go-to breakfast dish for many West Indians. So it was only natural for us to post this delicious Caribbean plantain porridge recipe.
Along with porridge being a huge part of Caribbean cuisine, plantain plays a huge role as well. Caribbean people love plantain, we cook in many different ways. We like to enjoy them fried, deep fried or even boiled.
We experiment a lot with plantain, we like to make cakes, gratins, chips, fries and pancakes with it. And we had to turn it into this delicious plantain porridge.
Delicious Caribbean Plan Porridge
West Indians love porridge and plantain so this Caribbean plantain porridge is to honor the two most loved things in the islands.
Ingredients
- 2 medium Ripe plantains sliced
- 1 & 1/4 cups Water
- 1/2 cup Evaporated milk at room temperature
- 4 tbsp Brown sugar
- 1 tsp Vanilla extract
- 1/2 tsp Cinnamon
- 1/4 tsp Nutmeg
- 1/4 tsp Ground cloves
- 1/4 tsp Almond essence
- 1/8 tsp Salt
- 1/8 tsp Ground ginger
Instructions
- Add the plantains and the evaporated milk to a blender and blend until is smooth and well blended.
- Once the plantain and milk are blended, pour the mixture into a pot placed over medium-low heat.
- Mix in the water, spices, almond essence and vanilla extract.
- Mix everything and let it cook for 7-10 minutes.
