Everyone loves a good plate of spaghetti and meatballs. Everyone will love this homemade chicken meatballs recipe. It’s a perfect twist to this Italian dish.
So summer is over, which is actually my favorite season, but my second favorite season has officially started which is fall. The reason I enjoy fall is because of the fashion and of course the food. I love the comfort food that comes with the colder weathers, such as casseroles, stews and pastas. To celebrate the beginning of fall and the beginning of fatty comfort foods, I thought I’d share this homemade chicken meatballs recipe.
Sometimes I wish I could switch bodies with an Italian grandmother that wears an apron and has a strong Italian accent, but I can’t. The closest I came to being Italian is with this recipe. But I love me some classic Italian dishes. One of those classics are spaghetti and meatballs, but I decided to add a little adjustment by making chicken meatballs instead.
On these days when I want to take a break from red meat but I still want to enjoy dishes like these, I just substitute it for chicken. And sometimes it isn’t as good and sometimes it is better than the original dish. This is one of those successful times and trust me you wouldn’t want to miss out on trying these chicken meatballs. They were tender and full of flavour.
Let us talk about that sauce tho. I made a quick spaghetti sauce and it was perfect. I would search for spaghetti sauce recipes online but they would be like 2 hours and a whole lot of ingredients. This chick didn’t have the time for that but I still wanted a homemade sauce. So I put together this quick version that marked the spot and it was perfect.
The sauce was the right amount of thickness and flavours. I had more sauce than meatballs and I loved that.
You can even enjoy this recipe without the meatballs if you like, it is that good. Trust me I have no reason to lie this is a recipe you need to try tonight for dinner. You will thank me later.
I hope you enjoy this recipe.
Now let’s get into it.

- 4 tbsps Brown sugar
- 1 tbsp Olive oil
- 2 tsps Fresh or dried parsley
- 1 tsp Fresh or dried thyme
- 1 tsp Paprika
- 1/2 tsp Fresh or dried oregano
- Salt to taste
- Black pepper to taste
Pasta:
- 16 oz Spaghetti
- Salt to taste
- 1 tsp Olive oil
Instructions
Cooking the pasta
- Place some water into a medium size pot over medium-high heat. Once the water has started boiling, stir in the salt and olive oil then add the spaghetti.
- Cook the spaghetti until al dente which is about 7-10 minutes, but check the packaging for further instructions.
Making the meatballs
- In a mixing bowl, add the ground chicken and the following ingredients: egg, breadcrumbs, salt, black pepper, onion powder, garlic powder, dried oregano, Worcestershire sauce. Mix all the ingredients together until everything is incorporated.
- Form the meat mixture into balls and set on a tray or a plate. You should have at least 10 to 12 meatballs.
- Place a skillet over medium-high heat and add olive oil to the pan. Once the skillet is warm add the meatballs to the pan and cook the meatballs for 5-7 minutes on each side.
- Once they are done cooking remove them from the skillet and set aside.
The spaghetti sauce
- Add the bell pepper, onion and garlic to the skillet and let them cook for 2 minutes.
- Pour in the peeled tomatoes, turn the heat down to low and let it simmer for 5-7 minutes. Afterwards pour the sauce into a food processor and mix everything together for about 3 minutes before returning to the pan.
- Once the sauce is back to the skillet, pour in the chicken broth and the seasonings as well as the brown sugar. Let it simmer on low for 10 minutes before adding the meatballs. Cook for another 7-10 minutes before serving.
- Add the pasta, top with the meatballs and sauce. You can add parmesan on top of it also. Enjoy!
