St.Patrick Day isn’t complete without a delicious Irish Beef Stew recipe. The meat is super tender and the stew is packed with flavour.
St. Patrick Day is the celebration of the Irish culture and to honour the culture, I wanted to share this amazing Irish Beef Stew recipe.
Recently, I tried this stew and I loved every bite of it and I knew I had to share it on the blog. The fact that St. Patrick day is approaching, I knew this would be perfect for the occasion.
This recipe not only celebrates St. Patty’s Day but it also celebrates the end of winter. This winter wasn’t my favourite, on top of it not being my favourite season, but the temperature was not what I expected it to be.
Although I strongly dislike the cold, I can see myself looking forward to those winter days because of this stew. It warms you and it is just simply delicious.

Irish Beef Stew with Guinness
Ingredients
- 2 pounds Beef chuck roast or shoulder cut into chunks
- 2-3 Large carrots peeled and sliced
- 2 Garlic cloves minced
- 1 Onion diced
- 1 Bay leaf
- 12 oz Guinness beer
- 2 cups Beef Stock
- 1 cup Red wine
- 4 tbsp Tomato paste
- 2 tbsp Canola or olive oil
- 2 tsp Fresh or dried parsley
- 2 tsp Fresh or dried thyme
- Salt to taste
- Black pepper to taste
Instructions
Season and prep:
- Season the beef chunks with salt and pepper.
Cook the beef:
- In a large dutchoven over medium-high heat, heat the oil and cook the beef on each side until brown for 5-7 minutes.
- Once the meat is brown remove from the pot and set aside. Lower the heat and cook the onion and garlic for 2-5 minutes.
- Return the beef to the pot and cover with the Guinness, red wine and beef stock. Season with salt, pepper, thyme, parsley and bay leaf.
- Cover and let it simmer for 1 hour.
- After the 1 hour mark add the sliced carrots. Cover and let it simmer for 30 more minutes.
- Serve and enjoy.
