Whenever I have extra time to make a bomb breakfast, I make pancakes. They are the perfect thing to have for breakfast, they are light, fluffy and versatile.

Over the years, I stopped buying pancake mix and I started making pancakes from scratch. Nothing wrong with using pancake mix but I just prefer making them from scratch.

When I perfected homemade pancakes, I started creating various flavours and these peanut butter banana pancakes are one of those that I love making.

Usually, I would either make three types of pancakes: banana, chocolate and the classic. And when I got bored, I decided to make a peanut butter banana pancake and I fell in love.

Being a peanut butter lover, I didn’t doubt for one second that these weren’t going to taste good. I had faith in these babies and they didn’t disappoint. So after trying these pancakes and getting them to taste as perfect as possible, I thought it was time to share it with you guys.

Since I’m still in college and I don’t have time each morning to make breakfast, I like to prep as much as possible. So when I make pancakes I like to freeze them in ziplock bags and reheat them in the morning.

I find that freezing them help keep the freshness and taste. All I do in the morning is stick it in the microwave and enjoy it with some pancake syrup.

Peanut butter banana pancakes

Starting your day off with pancakes is the best way to start. These peanut butter banana pancakes are perfect to kick off your day, the right way.

Ingredients

  • 2 Medium eggs
  • 1-2 Medium ripe banana
  • 1 & 1/2 cups All-purpose flour sifted
  • 1 cup Whole milk
  • 1/4 cup Vegetable oil
  • 4 tbsp Smooth peanut butter
  • 2 tbsp Granulated sugar
  • 1 tsp Baking powder
  • 1 tsp Vanilla extract
  • 1/2 tsp Baking soda
  • 1/4 tsp Salt

Instructions

  • In a mixing bowl, mash the banana then mix in the sugar, peanut oil, salt, vanilla extract, eggs and peanut butter. 
  • In a separate bowl, mix together the flour, baking powder, salt and baking soda. Add the flour mixture to the wet mixture gradually alternating with the whole milk. 
  • Once the batter is mixed together perfectly add a griddle over medium-low heat. Rub some butter onto the pan, then pour about a 1/4 cup of the batter when the griddle is hot.
  • Cook for 2 to 5 minutes then flip and cook the other side for 2-3 minutes. Follow the same steps with the rest of the batter. 
  • Once everything is done serve with some pancake syrup and enjoy!
