March is the end of the winter and the start of spring. I love March because it reminds me that Summer is soon here. Being from the islands means that I love summer because I get to go the the beach and enjoy a BBQ. Unfortunately, summer brings the heat which is my least favorite thing. Nonetheless, I get to calm the heat with this Pineapple Mint Iced Tea recipe every time.

Growing up, I used to think that ice teas were super hard to make. But now I’ve realized how easy they are to make and how delightful they are to drink.

In addition to being homemade, this juice is made with fresh ingredients. I used fresh mint leaves and fresh pineapple for the ultimate taste. So I highly suggest using only fresh ingredients for this recipe if you really want to enjoy yourself.

Funny story, I hated tea, I really did. Back in the Caribbean, we wouldn’t use tea bags but fresh tea leaves. And my grandmother would force me to drink tea on a daily basis and I hated it.

I was a hot chocolate type of girl. But when I moved away for college, I started drinking tea more and I started liking it. Now, I regret not taking advantage of the fresh tea leaves in my grandmother’s garden.

Making the juice

It’s a very simple recipe and you will always look to make it at home.

First, I start by prepping the pineapple. So I only use fresh pineapple for this juice because it’s just better. So I cut off the exterior part of the pineapple and the middle. Then I cut the pineapple into chunks and I wash them.

Second thing I do is I steep fresh mint leaves. I let the mint leaves steep in hot water for 7-10 minutes for a strong mint flavor.

Then I made a simple syrup which is just water and sugar that you let boil.

Finally, I blend all of the things together, of course not the mint leaves. I blend everything and then I strain the juice into a pitcher.

Pineapple Mint Iced Tea

There is nothing better than a nice refreshing iced tea during the summer/warmer days. This pineapple mint iced tea will be your BFF on those hot days.

Ingredients

Simple syrup:

  • 1 cup Hot water
  • 1/3 cup Granulated sugar

Mint tea:

  • 1 cup Water
  • 6-8 Fresh mint leaves

Pineapple purée:

  • 1 Fresh pineapple
  • Juice of 1 lime

Instructions

Making the simple syrup:

  • In a medium sauce pan, boil the water and the sugar together.
  • Stir constantly and let the sugar dissolve completely. It usually takes 2-3 minutes.
  • Remove from the heat and let it cool completely.

Making the mint tea:

  • Add the mint leaves to the hot water, cover and let it steep for 7-10 minutes.

Cutting the pineapple:

  • Start by slicing off the crown of the pineapple, then cut the skin off from top to bottom.
  • Slice the sides, making sure to leave the core and discard it.
  • Cut into chunks then wash it.

Making the juice:

  • Once the mint tea and simple syrup have cooled, add them to a blender along with the pineapple chunks and lime juice.
  • Blend everything together for about 2-3 minutes or until it is well blended.
  • Strain the juice into a pitcher to remove the pulp.
  • Add some ice cubes and enjoy!
