In the Caribbean, rice is very important. Many dishes has rice as the main dish. West Indians just love rice. So we had to bring you, yet another rice recipe with this quick Caribbean yellow rice and peas recipe.
Although rice isn’t grown in the Caribbean, it is still a staple in Caribbean cuisine. Because of the role it plays, West Indians have came up with many different ways to cook it.
Peas/beans are mixed in with the rice or it is used for desserts such as rice pudding. When it is enjoyed as a side dish, it is either served white or colored like this yellow rice and peas recipe.

Quick Caribbean Yellow Rice and Peas
This quick Caribbean yellow rice and peas recipe of a quicker version of the traditional recipe. Turmeric powder is used to get the yellow color.
Ingredients
- 15 oz Peas (pigeon or lentils)
- 2 & 1/2 cups Water
- 2 cups Rice
- 1/2 cup Coconut milk
- 2 tbsp Vegetable or coconut oil
- 1 & 1/2 tsp Turmeric powder
- 1/2 tsp Salt
- 3-4 sprig Fresh parsley
- 3-4 sprig Fresh thyme
- 1 sprig Scallion chopped finely
- 2 medium Pimento pepper chopped finely
- 2 medium Garlic cloves minced
Instructions
- In a medium size pot, warm the vegetable or coconut oil.
- Add the pimento pepper and garlic. Cook for 1-2 minutes.
- Stir in the rice and peas and let that toast for 3-4 minutes.
- Pour the coconut milk and the water. Add the salt, parsley, thyme, scallions and turmeric powder. Mix everything together.
- Let it cook for 15-20 minutes.
