The holidays are perfect for family time, ugly sweaters, warm and cozy drinks. But it is also the perfect time to eat whatever you want to eat and not feel guilty. And this sausage bacon herb stuffing recipe will have you forgetting guilt and enjoying flavour. 

Stuffing is one of those dishes that can be enjoyed either for Thanksgiving or Christmas. I like to enjoy it during Christmas because it has always been that way for me.

This stuffing recipe is very simple, I like simplicity when it comes to the holidays because of the various dishes that will be served. I like to enjoy everything and not have nothing overpowering the other. Although this is a simple recipe, it is still amazing. 

I wanted to share a stuffing recipe that can be done at the very last minute and with things you already have in your pantry and fridge. So, I opted for sausage and bacon as my meat base but instead of using fresh herbs I used dried herbs. Dried herbs are always laying around the house so that is why I used them but if you have fresh herbs, you can totally use them.

Before we get into the recipe, I just want to briefly go over the ingredients I used:

  • Bread: I used white bread that was about two days old but you can use whole wheat bread. The type of bread you use won’t change the outcome of this recipe unless you use brioche or any sweet breads. 
  • Bacon & Sausage: I loved using this combination for this recipe, I used pork sausage and regular bacon. But if you want a slight healthier option then you can definitely go for turkey bacon and turkey sausage. 
  • Herbs: Like I stated earlier, I used dried herbs because of convenience but you can use fresh herbs if you have some laying around. I used dried coriander, dried sage, dried thyme and the regular black pepper, salt, paprika and for a hint of heat I used cayenne pepper.

Sausage Bacon Herb Stuffing

Ingredients

  • 12 slices White or Whole wheat bread cubed
  • 2 Italian sausages
  • 2 Garlic cloves minced
  • 1 Medium onion diced
  • 2 cups Vegetable broth
  • 1/2 cup Diced bacon
  • 1 tbsp Worcestershire sauce
  • 2 tsp Salt
  • 2 tsp Dried or Fresh sage
  • 1 tsp Black pepper
  • 1 tsp Dried or Fresh coriander
  • 1 tsp Dried or Fresh thyme
  • 1/2 tsp Paprika
  • 1/4 tsp Cayenne pepper

Instructions

  • Preheat oven to 375°F/190°C. Grease a 9×9 square inch pan and set aside.
  • In a skillet over medium heat, melt the butter and cook the onion until translucent. Add the garlic and cook them for 2 minutes. 
  • Add the diced bacon to the skillet and cook until crispy. 
  • Remove the sausages from the casing and add them to the skillet. Break them up and cook until they have browned. 
  • Once the meat has browned, add the paprika, black pepper, salt and cayenne pepper. Stir everything together and let it cook for an additional 5 minutes before removing from the pan.
  • In a mixing bowl, combine the bread, sausage and bacon, broth and herbs. Mix everything together and pour into the baking dish. 
  • Bake the stuffing for 40-45 minutes and once it has done baking let it cool for 15 minutes before enjoying.

Notes

  • You can make this ahead of time also. Just cook the meat base and the onion and garlic ahead of time. When the day comes you just need to add the bread, broth and herbs and bake. 
  • This stuffing recipe can be used to stuff a turkey or chicken. Just let the stuffing cool completely before using it.
