Stir fry is the perfect quick, healthy and tasty dish that anyone can throw together. This teriyaki chicken stir fry recipe fits that description, it’s worth the try.

Stir fries are notoriously known for being easy to make and quick. It is the perfect way to consume your daily intake of vegetables. You can basically add any type of vegetables you like in a stir fry.

In this teriyaki chicken stir fry recipe, I went with classic vegetables which are accessible to everyone. I used carrots, string beans and red bell peppers. I wanted to use vegetables that were easy to find and that are already in your pantry but you can always add extras or substitute some.

There is no perfect way to make this recipe so I am only sharing with you guys the way I love to make it.

I made my own teriyaki sauce for this recipe. I love making my own teriyaki sauce because it gives me the best results. I have nothing against using the ones in stores but I think it is definitely worth it if you take the time to make your sauce from scratch.

Tips on making the sauce:

  • Soy sauce: You can definitely use light soy sauce or regular soy sauce for the recipe.
  • Water: The idea is to balance everything out in the sauce and mix everything together.
  • Cornstarch: This is the key to a thick teriyaki sauce after it has been simmered down. Without this ingredient you will end up with a watery sauce.
  • Ginger: To keep things easy, I simply used ground ginger but fresh ginger works even better.
  • I like to add everything to a bowl and whisking it together. If you are using the teriyaki has a sauce then you need to let it simmer in a pot for 5-10 minutes on medium heat, or until it thickens. If you are using it as a marinade then you can skip the cooking process.

Stir fry is usually enjoyed over a bed of rice. I like to enjoy mines with basmati white rice but you can definitely go for a low-carb version by using brown rice or cauliflower rice.

Teriyaki Chicken Stir Fry

Ingredients

Teriyaki sauce:

  • 1/4 cup Soy sauce
  • 1/2 cup Water
  • 1 tbsp Cornstarch
  • 2 tbsp Honey
  • 2 tbsp Brown sugar
  • 1/2 tsp Ground or fresh ginger

For the stir fry:

  • Teriyaki sauce
  • 1 pound Chicken breast cut into chunks
  • 1 medium Carrot sliced
  • 2 tbsp Sesame oil
  • 2 tbsp Olive oil
  • 1 Red bell pepper sliced
  • Handful of string beans or snow peas

For the chicken:

  • 1/4 cup Teriyaki sauce
  • Salt to taste
  • Black pepper to taste

Instructions

Make the sauce:

  • In a jug or bowl, whisk together the cornstarch, soy sauce, ginger, water, honey and brown sugar.

Season the chicken:

  • Place the chicken into a bowl and season with salt and black pepper. Pour a 1/4 cup or more over the chicken and mix everything together. Let the chicken marinate for at least 30 minutes.

Cooking the stir fry:

  • In a large frying pan warm the olive oil over medium heat before adding the chicken and vegetables. Cook everything for 10 minutes before pouring 1/2 cup or more of the sauce into the pan. Cook until the sauce thickens. 
  • Remove from the heat and stir in the sesame oil.
