Cornmeal comes from corn that has been dried and pressed into a flour like texture. It is used for many things in the Caribbean, especially for porridge.
For many West Indians, porridge is the best way to start the morning. Since we love making Caribbean food, we had to share this traditional Caribbean cornmeal porridge recipe with you guys.

Traditional Caribbean Cornmeal Porridge
This traditional Caribbean cornmeal porridge recipe is perfect for you to start your day off right. It is filling, delicious and tasty.
Ingredients
- 1 & 1/4 cups Yellow fine cornmeal
- 3/4 cup Evaporated milk
- 1/4 cup Brown sugar
- 1/4 cup Water
- 1 tsp Vanilla extract
- 1/2 tsp Nutmeg
- 1/2 tsp Almond essence
- 1/4 tsp Ground cloves
- Pinch of salt
- 1 Cinnamon stick (or 1/2 tsp)
Instructions
- In a bowl, mix the cornmeal and porridge together until smooth then set aside.
- In a pot over medium-low heat, add the milk, cinnamon, nutmeg and ground cloves. Stir everything and let it warm for 2-3 minutes.
- Stir in the cornmeal mixture along with the vanilla extract, almond essence and salt. Let it cook for 15-20 minutes, being sure to stir constantly.
- Once it's done remove from the heat and stir in the brown sugar.
- Serve and enjoy_
