Caribbean Stewed Goat Meat (Pressure Cooker Method)

This Caribbean stewed goat meat is ready in 40 minutes thanks to the pressure cooker method. The meat is tender, tasty and worth it.

Ingredients

For the seasoning

  • 4-5 lb Goat meat cleaned
  • 4 tsp Paprika
  • 2 tsp Salt
  • 4 tbsp Worcestershire sauce
  • 4 tsp Onion powder
  • 4 tsp Garlic powder
  • 1 tsp Black pepper

For the sauce:

  • 3-4 cups Water enough to cover the meat
  • 3-4 medium Garlic cloves minced
  • 1 medium Onion sliced
  • 4-6 sprigs Fresh parsley
  • 4-6 sprigs Fresh thyme
  • 2 sprigs Scallions diced
  • 4 tbsp Vegetable oil
  • 4 tbsp Tomato paste
  • 3 tbsp Brown sugar
  • 2 tsp Salt

Instructions

  • Add the meat to a large bowl, season with the paprika, onion powder, garlic powder, salt, black pepper and Worcestershire sauce.
  • Let it marinate for at least 30 minutes to 1 hour. Overnight is ideal.
  • Place the pressure cooker on a medium-high heat. Once it is warm, add the oil then add the goat meat. Cook the goat on each side for 3-5 minutes then remove it.
  • Add the onion, garlic and scallions. Let that cook for 2-3 minutes.
  • Spread the brown sugar evenly into the oil and let it caramelize for 2-3 minutes.
  • Stir in the goat meat and cover it with the browning.
  • Add the water, tomato paste, thyme, parsley and salt.
  • Cover the pressure cooker with the lid.
  • When the whistle starts to blow, lower the heat and let it cook for 30-40 minutes.
  • Remove the pot from the heat after the 30-40 minutes, and let it cool completely before remove the cover. Skipping this step is dangerous.
  • If you want a thicker sauce, place the pressure cooker(without the cover) back on the heat and let it simmer for 5-10 minutes or until the sauce is thick enough for you.
