Caribbean Style Coconut Rice
This Caribbean style coconut rice is made with coconut milk, coconut oil and pimento peppers. It is perfect for a quick dinner or lunch.

Ingredients

Pimento peppers
finely chopped

Garlic cloves

White rice

Coconut milk

Water

Coconut oil

Salt
Instructions
Rinse the rice with water at least 2-3 times.
Place a medium pot over medium heat and warm the coconut oil.
Stir in the pimento pepper, garlic and rice. Toast for 1-2 minutes.
Stir in the coconut milk, water and salt.
Cover and cook for 15-20 minutes.
