Cheesy Baked Breakfast Patties
Patties are a Caribbean staple, they are usually stuffed with beef or chicken. But these cheesy baked breakfast patties are different and delicious.

Ingredients
Patties dough:

All-purpose flour
sifted
1/2
cup
Water
room temperature

tbsp
Butter
softened

tbsp
Vegetable shortening

tbsp
Granulated sugar
2 & 1/2
tsp
Baking powder
1/4
tsp
Salt
Filling:
1/4
cup
Cheddar cheese
4-6
strips
Bacon
diced
1
tbsp
Butter
1/2
medium
Bell pepper
diced
1/2
medium
Red onion
diced

Instructions
Making the dough:
Mix the flour, salt, sugar and baking powder together then incorporate the butter and shortening.
Once the butter and shortening are incorporated into the flour, gradually pour in the water.
Knead the dough on a floured surface and then let it rest for at least 20-30 minutes.
Making the filling:
Beat the eggs and season with salt and pepper.
In a skillet over medium-low heat, melt the butter and cook the veggies for 2-3 minutes. Remove from the pan afterwards.
Cook the eggs and scramble them.
Once the eggs are cooked, remove from the pan.
Cook the bacon and then remove from the pan once it's cooked, drain on a plate with paper towel.
Making the patties:
Preheat your oven once again to 350°F/180°C and line a baking tray with parchment paper.
Shape the dough into a log and cut 4 pieces.
Roll each piece with a rolling pin, making sure not to roll them out too thin.
Fill the dough at the center with egg, bacon and cheese
Taking one piece at a time, use one edge to fold it over and press the edges together.
Repeat with each dough then place on the baking tray and bake for 25-30 minutes.
