Classic French Yogurt Cake

Ingredients

  • 1+1/2 cups Flour sifted
  • 1+1/2 cups Plain yogurt
  • 1 cup Granulated sugar
  • 1/4 cup Vegetable oil
  • 1/4 cup Whole milk at room temperature
  • 2 Eggs
  • 1+1/2 tsps Baking powder
  • 1 tsp Vanilla extract
  • 1/2 tsp Baking soda
  • 1/4 tsp Salt
  • Lemon zest

Instructions

  • Preheat oven to 375°F/180°C. Grease and line a 9 inch springform pan and set aside.
  • In a mixing bowl, whisk together the eggs, sugar and vegetable oil until the mixture is light and well incorporated. Stir in the yogurt and vanilla into the mixture. 
  • Sift in the flour, baking soda, baking powder and salt. Mix everything together, do not over mix. 
  • Pour the batter into the cake pan and bake for 1 hour and 10 minutes or until a toothpick inserted in comes out clean.
  • When it is done baking, remove from the oven and let it cool for 10-15 minutes then remove from the pan and let it cool on a cooling rack for an additional 10-15 minutes before enjoying!
