Coconut Mango Cobbler
Cobbler is a summer recipe and usually it's made with peaches or sometimes berries. But in this recipe I will introduce you to this coconut mango cobbler.

Ingredients
Mango mixture:

ripe
Mangoes
sliced into chunks

Granulated sugar

Cornstarch
Dough:
1
cup
All-purpose flour
sifted
⅓
cup
Coconut milk
¼
cup
Shredded coconut
¼
cup
Granulated sugar

Unsalted butter
cold

Vanilla extract

Instructions
Prep:
Preheat your oven to 350°F/150°C.
The mango mixture:
In a mixing bowl, mix together the mango chunks, sugar and cornstarch. Mix them well together and set aside.
The dough:
In a separate bowl, mix together the flour, salt, sugar and shredded coconut.
Using your hands, crumb together the flour mixture and the butter. Crumb together until the dough resembles wet sand.
Once the butter is well mixed into the flour, stir in the egg and vanilla extract.
When the egg and vanilla extract is well blended in, gradually pour in the coconut milk.
Assembly:
Pour the mango mixture into a 9x13 baking dish then top with the dough. You may need to use a spoon to spoon the dough.
Spread the dough over the mango mixture using a butter knife.
Baking:
Bake for 30 to 40 minutes.
Enjoy it warm with some ice cream, preferably coconut sorbet.
