Coconut Mango Tiramisu Parfaits

These coconut mango tiramisu parfaits adds a tropical twist to the traditional Italian dessert. The recipe uses fresh mango and coconut.

Ingredients

  • 8 oz Mascarpone softened
  • 1 cup Heavy whipping cream cold
  • 1/4 cup Sugar
  • 1 tsp Vanilla extract
  • 1 Ripe Mango cut into chunks
  • 6-8 Crushed graham crackers
  • Shredded Coconut
  • Toasted coconut flakes

Instructions

  • Whisk the softened mascarpone, sugar and vanilla extract until it is smooth.
  • In a separate bowl using a hand or stand mixer, beat the cold heavy whipping cream until soft peaks start to form.
  • Fold in the whipped cream into the mascarpone and set aside.
  • Assembly: use a jar or bowl, then start with the crushed crackers, tiramisu base, mango chunks and finally the coconut flakes. Repeat then top with the shredded coconut.
