These coconut mango tiramisu parfaits adds a tropical twist to the traditional Italian dessert. The recipe uses fresh mango and coconut.

8oz Mascarponesoftened
1cupHeavy whipping creamcold
1/4cupSugar
1tspVanilla extract
1Ripe Mangocut into chunks
6-8Crushed graham crackers
Shredded Coconut
Toasted coconut flakes
Instructions
Whisk the softened mascarpone, sugar and vanilla extract until it is smooth.
In a separate bowl using a hand or stand mixer, beat the cold heavy whipping cream until soft peaks start to form.
Fold in the whipped cream into the mascarpone and set aside.
Assembly: use a jar or bowl, then start with the crushed crackers, tiramisu base, mango chunks and finally the coconut flakes. Repeat then top with the shredded coconut.
