Colorful Caribbean Style Sugar Cakes
These colorful Caribbean style sugar cake are a great, quick way to satisfy any sweet cravings you may have. It is easy to make and quick.
Ingredients
- 1 Cinnamon stick
- 1 cup Granulated sugar
- 1 cup Finely grated coconut
- 1/4 cup Water
- 1/4 tsp Almond essence
- Coloring optional
Instructions
- Place a skillet/pan over medium heat.
- Stir in the water, sugar, almond essence and cinnamon stick.
- Boil for 1-2 minutes.
- Once the sugar has dissolved, stir in the coconut and let it simmer until the water has reduced.
- Remove from the heat and add the coloring (if you are using).
- Place 3-4 tbsp of the hot mixture unto a tray lined with parchment paper. Let it harden.
