Colorful Caribbean Style Sugar Cakes
These colorful Caribbean style sugar cake are a great, quick way to satisfy any sweet cravings you may have. It is easy to make and quick.

Ingredients

Cinnamon stick

Granulated sugar

cup
Finely grated coconut
1/4
cup
Water
1/4
tsp
Almond essence
Coloring
optional
Instructions
Place a skillet/pan over medium heat.
Stir in the water, sugar, almond essence and cinnamon stick.
Boil for 1-2 minutes.
Once the sugar has dissolved, stir in the coconut and let it simmer until the water has reduced.
Remove from the heat and add the coloring (if you are using).
Place 3-4 tbsp of the hot mixture unto a tray lined with parchment paper. Let it harden.
