Colorful Caribbean Style Sugar Cakes

These colorful Caribbean style sugar cake are a great, quick way to satisfy any sweet cravings you may have. It is easy to make and quick.

Ingredients

  • 1 Cinnamon stick
  • 1 cup Granulated sugar
  • 1 cup Finely grated coconut
  • 1/4 cup Water
  • 1/4 tsp Almond essence
  • Coloring optional

Instructions

  • Place a skillet/pan over medium heat.
  • Stir in the water, sugar, almond essence and cinnamon stick.
  • Boil for 1-2 minutes.
  • Once the sugar has dissolved, stir in the coconut and let it simmer until the water has reduced.
  • Remove from the heat and add the coloring (if you are using).
  • Place 3-4 tbsp of the hot mixture unto a tray lined with parchment paper. Let it harden.
