Dairy Free Cornmeal Porrdige

This dairy free cornmeal porridge recipe is a vegan friendly version of the traditional Caribbean breakfast dish. Perfect to start the day.

Ingredients

  • 1 & 1/2 cups Coconut Milk (or any milk of your choice)
  • 1 & 1/2 cups Warm water
  • 1 cup Fine yellow cornmeal
  • 1/3 cup Brown sugar
  • 1 Cinnamon stick
  • 1 tsp Vanilla extract
  • 1/2 tsp Almond essence
  • 1/2 tsp Nutmeg
  • Pinch of salt

Instructions

  • In a medium pot, warm the milk and cinnamon stick.
  • In a bowl, mix the cornmeal and warm water together until it is smooth.
  • Add the cornmeal to the milk along with the spices, vanilla extract, almond essence and salt.
  • Stir everything together and let it simmer for 7-10 minutes. Be sure to stir it occasionally.
