Dairy Free Cornmeal Porrdige
This dairy free cornmeal porridge recipe is a vegan friendly version of the traditional Caribbean breakfast dish. Perfect to start the day.

Ingredients

Coconut Milk
(or any milk of your choice)
1 & 1/2
cups
Warm water

cup
Fine yellow cornmeal
1/3
cup
Brown sugar
1
Cinnamon stick
1
tsp
Vanilla extract
1/2
tsp
Almond essence
1/2
tsp
Nutmeg
Pinch of salt
Instructions
In a medium pot, warm the milk and cinnamon stick.
In a bowl, mix the cornmeal and warm water together until it is smooth.
Add the cornmeal to the milk along with the spices, vanilla extract, almond essence and salt.
Stir everything together and let it simmer for 7-10 minutes. Be sure to stir it occasionally.
