Irish Beef Stew with Guinness

Beef chuck roast or shoulder
cut into chunks

Large carrots
peeled and sliced

Garlic cloves

Onion
diced
1
Bay leaf
12

Guinness beer

cups
Beef Stock
1
cup
Red wine

Tomato paste

Canola or olive oil

tsp
Fresh or dried parsley

tsp
Fresh or dried thyme
Salt
to taste
Black pepper
to taste
Instructions
Season and prep:
Season the beef chunks with salt and pepper.
Cook the beef:
In a large dutchoven over medium-high heat, heat the oil and cook the beef on each side until brown for 5-7 minutes.
Once the meat is brown remove from the pot and set aside. Lower the heat and cook the onion and garlic for 2-5 minutes.
Return the beef to the pot and cover with the Guinness, red wine and beef stock. Season with salt, pepper, thyme, parsley and bay leaf.
Cover and let it simmer for 1 hour.
After the 1 hour mark add the sliced carrots. Cover and let it simmer for 30 more minutes.
Serve and enjoy.
