Irish Beef Stew with Guinness

Ingredients

  • 2 pounds Beef chuck roast or shoulder cut into chunks
  • 2-3 Large carrots peeled and sliced
  • 2 Garlic cloves minced
  • 1 Onion diced
  • 1 Bay leaf
  • 12 oz Guinness beer
  • 2 cups Beef Stock
  • 1 cup Red wine
  • 4 tbsp Tomato paste
  • 2 tbsp Canola or olive oil
  • 2 tsp Fresh or dried parsley
  • 2 tsp Fresh or dried thyme
  • Salt to taste
  • Black pepper to taste

Instructions

Season and prep:

  • Season the beef chunks with salt and pepper.

Cook the beef:

  • In a large dutchoven over medium-high heat, heat the oil and cook the beef on each side until brown for 5-7 minutes.
  • Once the meat is brown remove from the pot and set aside. Lower the heat and cook the onion and garlic for 2-5 minutes.
  • Return the beef to the pot and cover with the Guinness, red wine and beef stock. Season with salt, pepper, thyme, parsley and bay leaf.
  • Cover and let it simmer for 1 hour.
  • After the 1 hour mark add the sliced carrots. Cover and let it simmer for 30 more minutes.
  • Serve and enjoy.
