Instructions
Prepping:
Preheat oven to 350°F/180°C.
Line a cupcake pan with liners and set aside.
Making the cupcakes:
In a mixing bowl, cream together the eggs, vanilla extract, sugar and vegetable.
Mix until pale, light and fluffy.
Sift in the flour, baking powder, baking soda and salt. Alternate with the milk.
Once everything is in the bowl, stir the mixture until it is mixed perfectly.
Baking the cupcakes:
Pour about 1/4 cup into the liners. Bake for 15-30 minutes.
Once it's baked, let it cool for at least 10 minutes.
Making the frosting:
In a small/medium sauce pan, add the water and the guava paste. Place over medium-high heat.
Break up the chunks so they can melt easily. Be sure to constantly stir the mixture and let it break apart.
Once the guava chunks are melted and the paste now resembles a thick jam consistency. Set side when it is done.
Using a mixer or stand mixer, beat the butter until it is fluffy. Slowly add in the vanilla extract, powdered sugar and the milk.
Beat the mixture for at least 5-7 minutes.
Frost the cooled cupcakes and enjoy!
