Ingredients
2Medium eggs
1-2Medium ripe banana
1 & 1/2cupsAll-purpose floursifted
1cupWhole milk
1/4cupVegetable oil
4tbspSmooth peanut butter
2tbspGranulated sugar
1tspBaking powder
1tspVanilla extract
1/2tspBaking soda
1/4tspSalt
Instructions
In a mixing bowl, mash the banana then mix in the sugar, peanut oil, salt, vanilla extract, eggs and peanut butter.
In a separate bowl, mix together the flour, baking powder, salt and baking soda. Add the flour mixture to the wet mixture gradually alternating with the whole milk.
Once the batter is mixed together perfectly add a griddle over medium-low heat. Rub some butter onto the pan, then pour about a 1/4 cup of the batter when the griddle is hot.
Cook for 2 to 5 minutes then flip and cook the other side for 2-3 minutes. Follow the same steps with the rest of the batter.
Once everything is done serve with some pancake syrup and enjoy!
