Quick Island Style Shrimp Salad

Nobody likes a boring salad, we all want to enjoy eating it. Thankfully this quick island style shrimp salad will make you full and happy.

Ingredients

For the shrimp:

  • 1 lb Shrimp cleaned and deveined
  • 2 tbsp Green seasoning
  • Pinch of salt

For the salad:

  • Arugula or Fresh spinach
  • 10-12 Cherry tomatoes cut in halves
  • 1 medium Avocado Sliced
  • 1 medium Cucumber sliced
  • 1 medium Corn

Instructions

Cooking the shrimps:

  • In a bowl, mix together the shrimp and the green seasoning, along with a pinch of salt.
  • In a skillet over medium-high heat, warm the oil and cook the shrimps on each side for 2-4 minutes or until pink.

Boiling the corn:

  • Boil the corn in salted water for 5-7 minutes. Once it's cooked remove from the heat and slice off the corn from the cob.

Assembly:

  • In a salad bowl, combine the cherry tomatoes, avocado slices, cucumber, corn slices and shrimps. Mix everything together.
  • Drizzle on the salad dressing, preferably the citrus creole dressing and enjoy!
