In a jug or bowl, whisk together the cornstarch, soy sauce, ginger, water, honey and brown sugar.
Season the chicken:
Place the chicken into a bowl and season with salt and black pepper. Pour a 1/4 cup or more over the chicken and mix everything together. Let the chicken marinate for at least 30 minutes.
Cooking the stir fry:
In a large frying pan warm the olive oil over medium heat before adding the chicken and vegetables. Cook everything for 10 minutes before pouring 1/2 cup or more of the sauce into the pan. Cook until the sauce thickens.
