Traditional Caribbean Cornmeal Porridge

This traditional Caribbean cornmeal porridge recipe is perfect for you to start your day off right. It is filling, delicious and tasty.

Ingredients

  • 1 & 1/4 cups Yellow fine cornmeal
  • 3/4 cup Evaporated milk
  • 1/4 cup Brown sugar
  • 1/4 cup Water
  • 1 tsp Vanilla extract
  • 1/2 tsp Nutmeg
  • 1/2 tsp Almond essence
  • 1/4 tsp Ground cloves
  • Pinch of salt
  • 1 Cinnamon stick (or 1/2 tsp)

Instructions

  • In a bowl, mix the cornmeal and porridge together until smooth then set aside.
  • In a pot over medium-low heat, add the milk, cinnamon, nutmeg and ground cloves. Stir everything and let it warm for 2-3 minutes.
  • Stir in the cornmeal mixture along with the vanilla extract, almond essence and salt. Let it cook for 15-20 minutes, being sure to stir constantly.
  • Once it's done remove from the heat and stir in the brown sugar.
  • Serve and enjoy_
