Ingredients
1lbBreadfruit(fresh or frozen)cut into chunks
2branches Thyme
2-3mincedGarlic cloves
1mediumOnion
1mediumBell pepper
1/2cupWater(you may need more or less)
1/4cupVegetable or olive oil
3tbspCurry powder
2tbspTomato paste
1tspSalt
1/2tspBlack pepper
Instructions
Boiling the breadfruit:
Add the chunks of breadfruit into a pot of boiling water that has been salted.
Boil until the breadfruit are cooked and you can pierce them with a fork, which takes 10-12 minutes. Do not boil them too long.
After they are cooked, drain them and set aside.
Making the curry:
In a large sauce pan or skillet over medium heat, heat the oil then add the onions, bell peppers and garlic. Cook for 2-3 minutes.
Stir in the curry, salt, black pepper, tomato paste followed by the water.Stir everything together then cover and simmer, let it simmer for 5-7 minutes.
Stir in the breadfruit chunks and let it cook for 7-10 minutes.@
